SEAFOOD PRODUCT PREPARATION AND PACKAGING
Canada has a pretty impressive seafood industry with an enormous coastline, which gives us a competitive advantage against most countries. We process both on-land and at-sea, with basic processing happening on ships, and more elaborate processing happening in facilities on-land. While we may typically think of seafood as fresh (and a good portion of it is), we also make a lot of products like fish oils, frozen fish dinners, dried and cured seafood, sauces, and much more.
Seafood Product Preparation and Packaging
The Seafood industry generally works in seasons: in high seasons the work is constant, hard and no vacation or time off, and in low- seasons it’s relaxed and there may be longer breaks in between work assignments. The extreme highs and lows in demands even each other out.

On-land & At -Sea
Seafood processing happens both on and off the boat.
Depending on the size of the operation you’re working with, they will have a ship large enough to have a full processing facility on board, where the seafood is caught, sorted, transformed into its final form, packed and stored on the ship. You could be at sea for multiple days at a time. When you get on land, the product is transported to its final destinations & sold. Sometimes, depending on the product or capacity of the organization, seafood is caught and may have some minimal processing on-board (like sorting) and then it’s brought back to land where there is a full processing plant ready to take on the job!
It’s important to know that there are positions in both areas, and more importantly, you get to decide which option works best for your personality.
Fresh Fish Processing
There are a ton of fish species that are regularly fished and processed in Canada, in this industry we are readying fresh fish for sale, this includes deboning, and cleaning up the insides and scales for the dinner table. Often people think of shellfish when they think of the “seafood industry”, but Canada literally produces tons of fish each year, think of albacore tuna, cod, salmon, halibut, and haddock to name a few. We also process squids, octopus, sea cucumbers, herring, sea urchins, pollock and more!
Fresh Shellfish Processing
Canada is renown for shellfish processing such as lobster, several types of crabs, oysters, scallops, abalone, mussels, clams, prawns, snails and more! While there’s always a high demand for workers, shellfish processing is one of the more sought-after careers, as the shellfish subsector is one of the most profitable parts of the seafood industry.
Drying, curing, smoking and preserving
Aside from the fresh and lightly processed seafood, many products go through additional processing phases to preserve them for longer periods of time. Canning fish & seafood is a big business, sometimes the product is even transformed into soups like chowder. Usually, there’s some form of drying, curing, smoking, steaming or other forms of cooking that takes place before preservation techniques.
Oils
Don’t forget, we LOVE our fish oil and Omega- 3 fatty acids which come from our fish and seafood friends! Fish oils are only found in cold water oily fish such as salmon and herring, and luckily, and we’ve got no shortage of cold waters in Canada, allowing us to respond to this health food need.
Other frozen products & meals
Nothing satisfies the soul like a hearty meal of fish & chips! There are all types of products made in the seafood sector, like fish sticks, fish balls, pre-seasoned fish, frozen dinners, artificial crab legs, fish roe, seaweed snacks, shrimp rings, etc. There are also ready-to-eat products either like candied salmon or in-store prepared sushi!
